Rice wine is an alcoholic beverage. Most varieties of wine are produced from fermented fruits. Unlike others, it is produced from the fermentation and distillation of rice. Microbes are the enzymes that convert rice starch to sugar. It is consumed in different parts of Asia. It is used in Asian cuisines and Chinese cooking. For example, rice wine is used in the marinades and sauces while preparing Chinese takeout boxes. It enhances the sweetness and flavor of Chinese food.

A variety of rice wines is also used as a beverage. Normally for its production, yeast is used. Yeast contains bacteria that promote fermentation. It converts sugar to alcohol. It is one of the key ingredients in all alcoholic drinks. But it does not mean that rice wine cannot be produced without yeast. Here we will discuss a simple recipe to make rice wine without yeast. The steps are as follows:

Ingredients For Making Rice Wine:

  • 2 cups of glutinous Rice
  • 2-liter water
  • 1 cup brown or white sugar (additional)

Rice Wine Procedure:

Step 1: Clean the Rice

Take two cups of rice. It will serve about 24 ounces. Wash the rice many times in a large container. Keep washing until water starts appearing white. I prefer to use glutinous or viscous rice. They are extra real and give a special taste to normal ones. For best results, soak the rice in the water for a few hours.

Step 2: Steep the Rice for One Hour

Once the rice gets cleaned, steep your rice for one hour in hot boiling water. Cook them till the rice becomes flooded. Then, strain the rice and remove all the water from them. 

Step 3: Boil the Water in a Streamer Base

Take 2 cups of water. Transfer it to the base of a streamer. Allow it to cook. When the water starts to bubble, place the rice on the top section of the streamer. Let them take their steam for about 25 minutes. If you do not have a streamer, boil water in a medium-sized pan. Place the rice in another container so they do not touch the hot water. Cover it and steam the rice for 25 minutes.

Step 4: Preparing the Rice Wine

After 25 minutes, pull off the streamer’s top to check the rice. If they are still crispy and solid, steam them for another 10 minutes. Once they are completed, remove them from warmth. Spoon out the rice into a cooking piece. Scatter them to make them cool quickly. Once the rice gets cooled, mix it with plenty of hot water. You can also add sugar to sweeten the taste. Mix them well. Place the mixture in an airtight container. Keep it stand for several days. With time, you will see that rice will start settling to the bottom, whereas the wine will collect above it. This is because natural fermentation has taken place. Your homemade rice vine is ready without adding yeast.

Step 5: Presentation of Rice Wine

For the decoration of rice wine, different methods are used. Present the rice wine in bottles or wine glasses. Then, make the rice balls and serve them in design bowls and the rice wine. You can also decorate it with coriander, lemon or cucumber, etc. It provides a tempting feeling for food lovers.

Moreover, it looks lovely as rice is often associated with Chinese food. So, people also prefer to serve rice wine and Chinese takeout boxes or plastic food containers. I hope our article provides a good understanding of how to make rice wine without using yeast.
